Jollof Rice, Rodo Wings & Shrimp Feast with Tropical Sun USA Easy Cook Rice

Jollof Rice is a flavourful rice dish cooked in a blend of peppers and tomatoes and is thoroughly enjoyed in West Africa, where it is a celebratory dish and also an everyday dish that you can enjoy at home. Whatever the occasion, Jollof Rice is delicious and a crowd pleaser!


I have teamed up with Tropical Sun using the new Tropical Sun USA Easy Cook Rice. Keep reading to discover how made this mouthwatering Jollof Rice, Rodo Wings & Shrimp FEAST with Tropical Sun.

INGREDIENTS

1 can (400g) chopped tomatoes

3 red bell peppers

1 scotch bonnet pepper

2 red onions

1 cup sunflower oil

200g tomato puree

1 tablespoon dried thyme

4 bay leaves

1 teaspoon ground white pepper

5 cups Tropical Sun USA Easy Cook Rice

half tablespoon salt,

2 tablespoons all-purpose seasoning

2 chicken stock cubes

1 teaspoon curry powder


METHOD

  1. Blend 1 can of chopped tomatoes, red bell peppers, scotch bonnet peppers, and 1 onion to a blender. Blend until smooth and set aside for later.

  2. Dice 1 red onion into small pieces.

  3. Add 1 cup of sunflower oil into a large pot and once hot enough, add in the diced onions, bay leaves, thyme, and white pepper and fry together on a medium heat for 3 minutes.

  4. Next add in the tomato puree, and fry for a further 5 minutes, stirring frequently.

  5. Now add in the pepper mixture blended earlier and stir in well to incorporate the fried puree. Season with salt, all-purpose seasoning, chicken stock cubes and curry powder. Stir this in well and cover and leave to boil on medium heat for 15 minutes.

  6. While the sauce is cooking, rinse the Tropical Sun USA Easy Cook Rice repeatedly to remove the starch. To do this, simply add the rice into a large bowl, fill up with hot water, stir rice, and drain water. Do this repeatedly until the water turns clear to remove the starch.

  7. Back to the hob to the sauce which has been cooking for 15 minutes, add in the rinsed rice and stir well to ensure rice is properly mixed in.

  8. Add 300 millilitres of water and stir well (this is just enough to cover the rice - the water should be just above the level of the rice)

  9. Cover the pot and leave the jollof rice to cook and steam on a low heat for 35-40minutes until rice is cooked, stirring halfway during cooking.
